Getting an order for 2000 Grandma’s Cheesecake Sandwiches in the first few weeks of being in business from Resorts World Catskills has truly been amazing, not to mention stressful, but that is expected when you launch a new start-up. The trick is not to get overwhelmed or caught up too much in the moment, so you can stay focused, and attend to your business. For me, it’s always been all about the work, and staying the course for the long term. Making a product that tastes amazing helps too. That’s why it’s been so rewarding to work with my grandma, Raphaella’s recipe, it’s in the family, and even though she is no longer here, I get to honor a part of her every time I bake. I think she’d be proud, and amazed at how well received her dessert has become. I just wish she was still here to see the company come together and grow. But, I have the next best thing, my Dad, her son, who is very happy I have taken his mother's recipe and made something of it.
